I received this sugar cookie recipe from my grandma about five years ago. It is quite easy to make near perfect cookies; in fact, I challenge anyone to mess up a recipe with only 6 ingredients. Not only is it quite easy, but it yields about 40 crispy and buttery cookies.
3 ¾ cups all-purpose flour
½ teaspoon salt
1 ½ cups (3 sticks) unsalted butter, softened
1 ½ cups granulated sugar
1 ½ teaspoons vanilla extract
3 large eggs
1 cup powdered sugar
About 1 tablespoon of lemon juice or milk
1 teaspoon vanilla
Begin by whisking the flour and salt together in a large bowl. Next, beat the butter, vanilla, and granulated sugar together until it is creamy. Add the eggs and mix on low until they are incorporated. Add about one third of the flour mixture and mix on low speed. Then, gradually add the remaining flour, mixing until blended. Scrape the dough onto a large sheet of plastic wrap and form the dough into a flat disk. After the dough has chilled for 2 hours (or more), preheat the oven to 350 degrees and roll out the dough. Cut the dough into the shapes of your choice, and place cookies two inches apart on a cookie sheet. Bake until golden brown, about 10 minutes.
Once cookies have cooled, prepare the icing by adding small amounts of lemon juice or milk to the powdered sugar and stirring until it becomes smooth and slightly runny. If you would like coloured icing, feel free to dye it. Finally, decorate your cookies and enjoy!
