Let’s combine the two to create an amazing cookie sandwich. So here is a recipe for a chocolate chip cookie ice cream sandwich that you can make for those hot summer days or just whenever you are craving these.
Ingredients:
- ¾ cup melted unsalted butter
- 1 cup of brown sugar
- ¼ cup of granulated sugar
- 1 egg + 1 egg yolk (room temperature)
- 1 tablespoon of vanilla extract
- 1 teaspoon of salt
- ¾ cup of baking soda
- 2 cups of all purpose flour
- 1 cup of semi sweet chocolate chips
- ½ gallon of vanilla ice cream
Instructions:
- Line a baking sheet with plastic wrap and spoon in the softened ice cream at an even layer. Then put the baking sheet in the freezer for about 4 hours.
- In a large mixing bowl combine the melted butter, sugar, and brown sugar until fully combined. Add in the egg, egg yolk, and vanilla extract. Mix until fully combined.
- In a separate bowl mix the flour, baking soda, and salt. Combine dry ingredients into the wet ingredients until everything combines. Lastly, fold in your chocolate chips but do not over mix.
- Then put your dough in the fridge to chill for half an hour or overnight.
- Set the oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper and roll dough into balls and bake for about 12 minutes. Or until cookies are golden brown at the edges. Then place cookies in the freezer to chill.
- When the cookies are cooled, use a cookie cutter to cut out the ice cream. Sandwich the ice cream between two cookies and place back in the freezer to chill for 2 hours. And then allow the cookies to thaw for a bit and enjoy!
