As the winds begin to howl, sending chills and goosebumps on your skin, which leaves you no choice but to bundle up in a warm sweater, roll up your sleeves and get to baking. There is truly nothing better than watching your favorite fall movies while taking a bite of a sweet treat full of warm seasonal fall flavors such as cinnamon, pumpkin, and apples. When interviewed about why fall baking is so magical, sophomore Saydee Fernandez stated, “I love baking in the fall because it makes me feel so warm and it fills my house with the scent of pumpkin.”
These comforting fall treats can vary from pumpkin muffins, cookies, to even cinnamon apple treats such as apple crisp. Enjoy these cozy, tasty, fall recipes!
Brown Butter Chocolate Pumpkin Oatmeal Cookies
Ingredients:
1 ½ cups rolled oats
1 tsp pumpkin pie spice
1 tsp cinnamon
½ tsp baking soda
½ tsp baking powder
½ tsp salt
1 cup (2 sticks) salted butter
¾ cup brown sugar, light or dark
½ cup granulated sugar
½ cup pumpkin purée
1 large egg yolk, at room temperature
1 ½ tsp vanilla extract
1 ½ cups chocolate chips
Instructions:
- First brown your butter. Add your butter to a saucepan over medium-high heat while allowing the butter to melt and stirring continuously. This should take about 5-8 minutes. Remove from heat and set aside to cool.
- Now onto the dough. Mix all of your dry ingredients together and then in a separate bowl mix together your wet ingredients. Whisk and combine both of these mixtures together. Slowly fold in your chocolate chips until evenly distributed amongst the dough.
- Cover the dough and place in the fridge to chill for ideally 1-2 hours. Once ready to bake, preheat the oven to 375 F. Roll out your dough balls. Each dough ball should contain up to 3 tbsp of cookie dough each.
- Bake at 375 F for 12-14 minutes until the middle is soft and the edges are golden and crispy. Let cool on the pain for 5-10 minutes for the best results. Sprinkle a pinch of flaky sea salt and enjoy!
Cinnamon Apple Crisp
Ingredients:
6 large apples (preferably Granny Smith but any variety is fine)
¼ cup light brown sugar
¼ cup granulated sugar
3 tbsps corn starch
1 tbsp ground cinnamon
¼ tsp ground nutmeg
⅛ tsp ground cloves
¾ tsp salt
For the crisp topping:
¾ cup butter, cut into cubes
1 ⅓ cup old fashioned oats
1 ½ cups flour
½ cup light brown sugar
½ cup cup granulated sugar
¼ tsp salt
1 tbsp ground cinnamon
Instructions:
- Butter a 9×13 inch pan and preheat the oven to 375 F.
- In a large bowl mix together your dry ingredients
- Peel and core all of your apples and slice them thinly and toss into the dry ingredient mixture. Add apples to your buttered pan and arrange in an even layer before setting aside.
- Moving onto the crisp topping, in a medium bowl stir together the oats, sugars, spices, salt and flour . Use your hands, a pastry cutter, or a fork to cut the butter down into the mixture, it should begin to look like wet sand and be able to clump together. Sprinkle over the apples evenly.
- Bake at 375 F for 10 minutes before reducing the temperature to 350 F and baking for 35 more minutes until the topping is golden and the apple layer is bubbling. Let cool before serving with a scoop of vanilla ice cream and enjoy!
